There’s nothing more refreshing than sitting down to a zesty and fresh dinner on a hot summer night. Black Bean Grilled Chicken and Avocado Tacos with Chipotle Ranch Dressing make for a great recipe to try for a gathering with friends, or simply to sit down with the family and relax:
Ingredients:
Corn tortillas
3 large boneless chicken breasts
1/2 teaspoon salt
2 teaspoons oil
1/4 teaspoon cayenne pepper
1/2 teaspoon Mexican Chipotle chili powder
1/2 teaspoon garlic powder
1 cup diced yellow or white onion
1/4 cup Rotel tomatoes w/ the juices
1 avocado cut into chunks
1 can black beans heated over medium heat
1/2 shredded Mexican blend cheese
Chipotle Ranch dressing
Instructions:
Heat oil in skillet over medium heat and season chicken with salt, cayenne pepper, chili powder, and garlic powder. Cook chicken thoroughly. Next, heat tortillas in a medium-large skillet until they start to bubble up. This will make them easier to fold and hold taco ingredients. Lastly, add 1/4 cup of chicken to each tortilla and top with Rotel tomatoes, black beans, onion, avocado, cheese, and (optional) cilantro. Drizzle the top with fresh squeezed lime and chipotle ranch dressing. Enjoy!
