Savory Mashed Potato Patties

These delicious mashed potato patties are the perfect southern-inspired side dish- with a fun twist! Whether you’re looking for a clever way to use up leftover mashed potatoes, or are simply craving a potato-based snack, you’ll want to give these a try!  Serve them up with some savory sour cream for the ultimate flavor combination. 


4 cups mashed potatoes 

1/2 cup milk

1/3 cup fine dry bread crumbs

¼ cup minced yellow onion

¼ cup minced green onion

1 egg, beaten

1 teaspoon dried parsley

1/2 teaspoon salt

1/4 teaspoon pepper

1/8 teaspoon garlic powder


  1. In a large bowl, combine all ingredients and stir until completely combined.
  2. With your hands, shape the mixture into small patties. On average, you should make about 14-16 patties from this recipe.
  3. Lightly coat a skillet with olive oil and put on medium-high heat. Add the potato patties, cooking about 4-5 minutes on each side, or until browned.
  4. Serve as is, or with ketchup or sour cream! Enjoy!
